This Plum and Coconut Slice from Team TIFFXO is the perfect way to finish off an autumn dinner!

Plum Coconut Oat Slice

makes: 18 squares                 prep: 10 minutes                     cook: 35 minutes


5 plums, sliced

¼ cup rice malt syrup

1 tsp mixed spice

2 cups oats

1 cup almond meal

¾ cup wholemeal spelt flour

½ cup coconut + 1 tsp extra to garnish

¼ tsp salt

150g butter, melted


Preheat oven to 200°C and line a rectangle lined slice tin (about 18 x 25).


Add plums, 1 tsp syrup and ½ spice mix to a medium bowl and mix to coat plums. Set aside.

Combine oats, remaining mixed spice, almond meal, flour, coconut and salt in a large bowl.

In a small bowl, combine butter and remaining syrup. Add to the oat mixture and mix well to combine.

Add ¾ of the oat mixture to the tin and press down firmly with your hands. Using all the plums arrange them evenly on the base. Sprinkle the remaining mixture over the top and press down firmly with your hands.

Bake in the oven for 35-40 minutes. Allow to cool, sprinkle with the extra coconut and slice into 18 squares.

Tips: Suitable to freeze, allow to defrost on the bench or warm just slightly in the microwave.
